Roast Beef with Fresh Garlic

List of Ingredients
3 large garlic cloves, minced
1-1/2 Tablespoons salt
1/2 teaspoon Hungarian sweet paprika
1/2 teaspoon turmeric
1/2 teaspoon ground thyme
1/2 teaspoon pepper
1 (7-pound) beef rib roast, cut from small end
(about 3 ribs), trimmed
2 Tablespoons vegetable oil
Recipe
1. In a small bowl, mix garlic, salt, paprika, turmeric, thyme and pepper.
2. Wipe beef dry and rub all sides with oil. Rub garlic mixture over sides
and top of beef.
3. Transfer to shallow pan. Cover loosely with foil. Refrigerate
overnight.
4. Let roast stand at room temperature 1 hour.
5. Preheat oven to 450 degrees and position rack in lowest third of oven.
6. Roast beef 30 minutes to sear. Reduce oven temperature to 325 degrees
and continue cooking for 1 hour and 15 minutes, the roast will be medium
rare.
7. Remove from oven and let meat stand at least 15 minutes. Carve meat
into 1/2-inch slices and serve.
