    fermented solar ice tea

    * Into a gallon glass jar add
    * 3 tbs mild kefir/yogurt whey + 4 tbs of white sugar
    * 1/4 of lemon or lime or orange (squeezed)
    * Fill up with filtered water and 12 teabags of your choice.
    * Let sit out in the sun for 8 hours.
    For the next time just add 1/2 cup of the fermented iced tea to the gallon jar, add 1/2 -1/4 cup of white sugar or another sweetener and the teabags of your choice. I use 12 regular sized.... often half regular black and the rest a flavor of some kind. Mint leaves from the garden are nice too, as are any herbal amendments. To keep up with demand, I put out a jar at night (before I forget) and by dinnertime it's always ready. If you do forget or are in a hurry... start out with boiling water for part to get things started and then 4 hours outside in the sun. I like this technique because if there is any mold on the tea... you zapped it. Just doing a cold-brew in the frig is not enough. I found that out once the hard way.
