Kefir Bread 2

3 c flour (I use mostly organic whole wheat, but there is a touch of
white in here - not for much longer, though, using it up)
2 c kefir (well-ripened - but what I used had only been decanted the
day before and was refrigerated)
1 tbsp olive oil
1/2 to 1 tsp salt
1/2 to 1 tsp sugar (I used 1 tbsp sucanat)
Combine, knead well - make sure the dough is elastic (I didn't know
that the first time LOL. Put it into a well-buttered loaf pan and
allow to rise for 12 to 24 hours. It should double. I did mine for
24. Throw it into an oven at 350 and bake for about an hour - keep
an eye on it, though. This was definitely a hit with my family -
yay for the lady on the kefir group!! Could definitely be used for
sandwiches, although it's a little bit crumbly at points - I'll be
experimenting a little more. Oh, and someone on list mentioned that
if you use lighter or white flour, use a little less kefir - like,
maybe by 1/2 a cup. Someone report back on that, would ya? :-)
