    Oatmeal Muffins

    Soak overnight:
    2 cups rolled oats
    2 cups whole wheat flour
    in 2 cups yogurt, kefir, etc.
    The next morning, add
    1 cup melted butter (or other fat)
    2 eggs
    1/4-1/2 cup maple syrup
    1 teaspoon baking soda
    2 teaspoons salt
    2 teaspoons baking powder (I make my own from page 477 in NT)
    Bake at 400° for 20 minutes. Makes 24 muffins.
