List of Ingredients
1 cup Carbsense Bake Mix or other low carb bake mix
1 cup pecans -- chopped
1 tablespoon cinnamon
1 teaspoon nutmeg
1 1/2 cup Splenda
1 teaspoon baking soda
1/2 teaspoon baking powder
4 eggs
1/2 cup canola oil
1 teaspoon vanilla extract
2 baby zucchini -- coarsely grated
Recipe
1. Heat oven to 350
2. Grease loaf pan.
3. Combine first 7 ingredients...set aside.
4. In large bowl combine zucchini, oil, vanilla, and eggs.
5. Slowly add in dry ingredients to zucchini mixture. Mix well.
6. Scoop into prepared loaf pan and bake for 1 hour.
