I found a new recipe! Or rather, I combined (and then altered) two old ones, and created a new one that is healthy! It's whole wheat muffins, sweetened only with maple syrup (so, no processed sugar) Best of all, DH thinks they're fine, and DS LOVES them!!! I love finding a healthy snack--especially when it doesn't *taste* like a 'health food' kwim?!
2 c wheat flour
1 tsp. baking soda
1 c raw milk (or 1 1/2 c kefir)
1 egg
1/2 c melted butter
1/2 c maple syrup
1/2 c raisins (if desired--I don't desire, but they'd work!)
Mix dry ingredients in a bowl, and then make a 'well' in the center of them. Mix all wet ingredients together in another bowl (or a big measuring cup) and then add them to the dry mix all at once. Stir with a wooden spoon just until mixed (may be a little lumpy--that's fine) If the batter is thick and doughy, add a little more milk...
Bake at 350 for about 20 minutes.
Glaze (This is my little indiscretion!)
2 Tbs. butter
3ish Tbs. maple syrup
thickener...(the original recipe calls for 3/4 c pow sugar...I use about 2 Tbs. cornstarch and 1/2 c wheat flour...it still thickens fine, and no fake sugars!)
Mix well, and pour over hot muffins as they come out of the oven. Glaze will set up as muffins cool.
Hmm, you know what else would be good? Little chopped apples in the muffins! Oh, I'm having a heyday with this one! :-)
