Baked Oatmeal 2

Thought I'd share one of my (and the Amish's) favorite breakfasts -
baked oatmeal. The following is an old recipe from The Olde Square Inn in
Mount Joy (Lancaster County), Pennsylvania that actually calls you to soak
it overnight. In trying to make it *completely* NT friendly, I soaked the
2 cups oatmeal with a little less than 2 cups raw milk and mixed in 2
tablespoons of whey. Then I added all the other stuff (substituting
Sucanat/honey for brown sugar and using coconut oil) in the morning and
baked it. Check it throughout the baking time to take it out at the
consistency that you want it. I like it stiff enough to cut into squares.
Then you serve it with either raw milk poured over it, a dollup of cream
cheese or butter, apple sauce/sauteed apples, or homemade fruit preserves
(heat frozen fruit and all-fruit spread together).
Let me know if you have any other ways of making it NT friendly. Do you
think you could soak it all together overnight, or just stick with the
oats, milk, and whey?
Baked Oatmeal
Ingredients:
2 cups oatmeal
2 cups milk
4 eggs
1/4 cup oil
1/2 to 1 cup brown sugar
1 tablespoon baking powder
1 teaspoon salt
cinnamon, dried fruit, nuts to taste
Mix together in bowl, spray casserole with Pam and pour mixture in it. It
will look like soup. Refrigerate over night. Bake at 350 degrees for about
one hour.
