    (Belgian) Lawful Waffles

    Plug in your Belgian waffle maker, allow to preheat while
    mixing the dough.


    List of Ingredients




    6 eggs separated
    1 cup bake mix--if desired, substitute almond or pecan flour with a tablespoon of gluten added
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 cup cream
    3 tablespoons melted butter
    1 teaspoon real vanilla
    AS to equal 2 Tablespoonfuls
    Da Vinci syrup of your choice

    Beat egg yolks well, add cream and vanilla, continue beating
    until well mixed, add melted butter, salt and artificial
    sweetener. Mix baking powder with almond flour and gluten,
    add to wet ingredients in increments of about 1/3 cup each,
    mixing well after each addition, to incorporate the dry mix
    into the wet.

    In a separate bowl and using a hand-held electric mixer or
    using a table top mixer, beat egg whites until they are
    stiff. Add about 1/3 of the dough to the egg whites and fold
    in well by hand-until the dough is mostly mixed evenly--a
    few bits that are not even will be ok--then add the egg
    white mixture to the dough bowl, folding and turning until
    the egg whites are totally incorporated and the mixture is
    even. Use a folding motion to "save" the bubbles in the
    beaten egg whites.

    Place 2/3 cup of the batter on the heated and ready waffle
    iron and bake for about 3 to 4 minutes, depending on your
    particular machine. Gently wiggle the top of the griddle as
    you lift it and it should come out well done and ready.
    Have a plastic pancake turner handy (such as is used on
    Teflon lined pans) so if it is needed you can assist in
    removing the waffle without scratching your grill.

    Because of the airiness of the finished product, it is best
    to use melted butter on Belgian waffles, if you want it,
    just brush or drizzle it on.

    Imagine this with almond flour and amaretto syrup or made
    with pecans and maple flavored syrup. A scoop of whipped
    cream or LC ice cream may add a festive touch for holidays
    and strawberries are in season--maybe this would be a real
    treat with them.
