    Crust-less Quiche

    5 large Eggs (10)

    1 cup of goat’s milk yoghurt or kefir (4)

    10 oz of fresh spinach (frozen if necessary) (0) If fresh steam and squeeze out water first, if frozen drain in colander and squeeze out water before adding to quiche mix.

    4 oz of hard goat’s cheese (12)

    Salt and crushed garlic to taste as needed



    Beat the eggs and kefir to frothy

    Add spinach, cheese, salt & garlic bake in dish sprayed with oil for 40-45 minutes @ 350 F



    Makes 4 servings at 6.5 points per serving.

    The un-served portions can be wrapped and frozen and used when needed.
