List of Ingredients
5 eggs
3 green onions with tops, chopped
1/4 chopped red bell pepper
1/4 pound cooked ham, julienned
3-4 slices bacon, cooked crispy and crumbled
4 ounces sharp Cheddar cheese
1 teaspoon salt
1/4 teaspoon dried minced garlic
1/8 teaspoon black pepper
1/8 teaspoon chili powder
1/8 teaspoon paprika
5 Tablespoons water or cream (1/4 cup plus 1 Tablespooon)
3 Tablespoons bacon drippings
Recipe
Beat eggs. Add green onions, bell pepper, ham,
crumbled bacon, and cheese which has been shredded or cut
into small bite size pieces. Add seasonings and liquid, mix
well. Pour into hot bacon drippings and cook gently,
pulling set egg mixture away from the walls of the pan as it
becomes set. When almost all of the egg mixture has set,
fold the omelette into half and remove to a warmed plate.
Cut ionto wedges, top with a dollop of sour cream. Serve
warmed, bottled or fresh Mexican red salsa alongside.
