Omelet with Shredded Cheese

1 eggs (2)
1 oz of goat’s milk hard cheese (4)
1 tsp of olive oil (1)
Beat egg until light and fluffy, put 1 tsp of olive oil (1) in pan and cook one side of the omelet.
Turn omelet and add cheese, then fold into half and cook until set.
Serve with a cup of fresh squeezed grapefruit juice (2)
Makes 1 serving at 9 points per serving.
