18 large eggs
2 8 oz bricks of cream cheese
2 10 oz packages of frozen chopped spinach, thawed and drained well
1 chub of turkey sausage, or regular sausage
2 cups of shredded cheddar
1/2 cup of chopped green onion (optional) or scallions
season to taste as desired
(many different things can be done to this to add to it)
mushrooms, for example, add nice bulk, but can throw off the moisture factor, so be careful.
It can also be made without the meat, or with different types of meat, like chicken. There are so
many different ways to make it, since it's like quiche, in a way.
saute (and crumble) the sausage and onions in a frying pan (drain any grease)
in a blender mix the eggs first, then add the cream cheese and then the sausage mixture
In a bowl mix the spinach, cheddar cheese, and the blended mixture all together
Pour into a lightly greased 13 x 9 inch baking pan and bake until the top is golden brown.
This can be cut into single servings, and frozen separately. Serve with cut up cucumber.
