    Asparagus-Ham Bake

    1 tablespoon butter
    2 tablespoons minced onion
    1 tablespoon diced pimento
    3 ounces cream cheese, in chunks
    1/2 cup heavy cream
    1/4 cup grated Parmesan cheese
    8 ounces fresh asparagus, trimmed and cut into 1 inch pieces
    8 ounces chunked or shredded ham
    6 hard-boiled eggs, peeled and coarsely chopped
    1 cup grated Monterey jack cheese
    Directions:
    Preheat oven to 350 degrees F. Saute onion in butter until soft. Add cream cheese and stir constantly until melted and smooth. Slowly add cream, stirring constantly. When well blended, add Parmesan cheese and pimento, stir to blend; remove from heat and set aside.

    Boil or steam asparagus until crisp-tender. Mix with ham, reserved sauce, and half of the eggs. Place in a 2-quart baking dish and top with remaining eggs and grated cheese. Bake until top is golden, about 25 minutes. Serves six.

    Per serving: 4g carbohydrates; 21g protein; 28g fat (15g saturated); 350 calories.
