    List of Ingredients




    2 cups cut asparagus (1" pieces)
    2 tbsp Atkins Bake Mix
    1/2 tsp salt
    1/4 tsp pepper
    8 oz boneless, skinless chicken breasts, cut into 1/2" pieces
    cooking spray
    1/2 cup finely chopped red bell pepper
    1/2 cup chopped onion
    1/2 cup water
    1/2 cup heavy cream
    3 eggs
    4 1/2 ounces shredded cheddar cheese

    Recipe



    1. Preheat oven to 350 degrees. Butter a 9.5 quiche pan on the (inside) bottom and sides.

    2. In a large pot of boiling water or in an asparagus steamer, cook asparagus 3 minutes, until just tender. Drain, rinse with cold water, and drain again.

    3. On a plate, combine Atkins Bake Mix, salt and pepper. Add chicken, turning to coat evenly.

    4. In a large skillet, heat the cooking spray; add chicken, reserving any remaining bake mix mixture. Cook over medium-high heat, stirring constantly, 4-5 minutes, until chicken is no longer pink. Remove chicken and set aside.

    5. In same skillet, heat cooking spray; add bell pepper, onion and reserved bake mix mixture. Cook over medium-high heat, stirring constantly, 5 minutes, until vegetables are softened. Remove vegetables and set aside.

    6. In medium bowl, with a wire whisk, combine water, cream and eggs, blending until mixture is frothy. Stir in cheese, asparagus, chicken and vegetable mixture. Pour mixture into prepared pie plate; bake 40 minutes, until knife inserted in center comes out clean.

    7. Cut into 6 equal wedges and serve the chicken asparagus quiche.
