    DANA CARPENDER’S TUNA MELT CASSEROLE

    Makes 3 servings
    (I made it in the GT Express Machine but you can use an oven)


    List of Ingredients




    1 (6 oz.) can tuna, drained
    1 cup shredded Cheddar Cheese
    3 slices (1 1/2 oz.) processed American Cheese (I used 1/3 cup more of
    shredded cheddar)
    3 eggs
    3 Tablespoons of ground flaxseed meal or 3 tablespoons of low-carb bake mix
    (I used ground flaxseed meal)
    1 teaspoon garlic powder (I just sprinkled some in and didn’t use that much)
    1/2 teaspoon salt

    Recipe



    Combine all ingredients well and spoon 1/3 of the mixture into each side of
    the GT Express machine (You’ll have to make that batch first and then pour
    the rest of the mixture into just one side of the GT Express after the first
    batch is done.) Cook for about 9 minutes.
    Oven Directions:
    Preheat oven to 400° F. and grease a 9” pie plate with 1 teaspoon oil.
    In a large bowl, combine the tuna, cheeses, eggs, flaxseed meal, garlic, and
    salt. Mix well.
    Pour the tuna mixture into the prepared pie plate, pat down firmly, and bake
    for approximately 30 minutes or until browned and bubbly.
    Yield: 3 servings, each with 5 gr. Of carbs and 3 gr. Of fiber, for a total
    of 2 gr. Of usable carbs and 38 grams of protein.
