Easy Bacon Quiche

6 large eggs
1/2 teaspoon salt
1 block (8 oz)cream cheese
1/2 cup heavy cream
1/2 stick butter
1/2 onion, chopped fine
salt and pepper to taste
6-8 slices of cooked bacon, crumbled
2 cups grated cheddar or jack cheese
Preheat oven to 350°F.
Using a blender or food processor, blend the eggs, cream cheese, cream, butter, salt and pepper until smooth. Add the onions and pulse until onions are distributed.
Pour into a 9 inch square glass baking dish prepared with non-stick spray.
Sprinkle the bacon evenly on the top and then add the grated cheddar over the bacon. Bake for 50 minutes or until a knife blade inserted into the center comes out clean.
Serve hot. Makes a great base for lobster or shrimp bisque or try topping it with home made hollandaise or with mexican salsa from a bottle.
