Ham and "Apple" Quiche

List of Ingredients
1 cup cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1 cup cream
4 eggs
1 cup cubed ham
2 large zucchini, sliced
2 packets sugar free apple cider drink mix
1 tablespoon Splenda (or other heat stable artificial
sweetener)
1/2 teaspoon cinnamon
1 tablespoon dry mustard powder
1 tablespoon Worcestershire sauce
1/8 teaspoon garlic salt
non-stick spray
Recipe
Simmer the sliced zucchini in a minimum of water and the
sugar free apple
cider drink mix. Turn occasionally to make sure both sides
absorb the flavor
of the apple cider drink mix. Add a little more water if
necessary as the
liquid evaporates. Simmer zucchini until crisp tender.
Spray a glass or metal pie plate with non-stick spray.
Combine the cheddar
and Monterey Jack cheeses, and place 1/2 in the pie plate,
distributing
evenly. Arrange the cubed ham atop the cheeses. Place the
simmered zucchini
slices over the cubed ham. Sprinkle with Splenda and
cinnamon. Top with
remaining cheeses.
In a medium bowl, combine the eggs, cream, dried mustard
powder,
Worcestershire sauce, and garlic salt. Use a mixer to blend.
Pour over the
ingredients in the pie plate.
Bake in a 350 degree oven for 45 to 55 minutes, or until a
knife inserted in
the center comes out clean. Let stand 5 minutes before
slicing into thin
wedges.
