Hot Chicken Salad
List of Ingredients
2 Medium Boneless, Skinless Chicken Breast Halves
1/2 C. Chopped Celery
1/3 C. Chopped Green Pepper
2 T. Finely Chopped Red Bell Pepper (Optional--it's just for color)
1/4 C. Sliced Green Onions (About 2)
2 oz. Cheddar Cheese, shredded (about 1 C.)
1/3 C. real Mayonnaise (not reduced fat)
1 t. Worcestershire Sauce
1/4 t. Tabasco Sauce (or less if you don't like it "hot")
Recipe
Place 2 chicken breast halves in a large frying pan with 2 C. water. Bring to boil. Cover pan & simmer 15 minutes. Remove from pan & cool slightly; chop into cubes. Chop vegetables & add to chicken. Mix in shredded cheese. In small bowl, mix Mayonnaise, Worcestershire Sauce & Tabasco Sauce. Add to chicken & vegetable mixture & mix well. Place mixture into 1 1/2 Qt. casserole dish sprayed with Pam. Bake at 350 F for 25 minutes. Vegetables will still be crunchy & tasty. This makes 2 generous servings
