Onion Casserole

4 medium Vidalia or Maui onions, vertically sliced 1/4 inch
thick
1/2 cup (1 stick) butter
1 (10-ounce) can cream of mushroom soup
4 eggs, beaten
1/4 teaspoon salt
1 cup half and half
1 cup shredded Cheddar cheese
Recipe
Sauté the onions in the butter in a skillet until "clear,"
pour in the soup stir together, and set aside. Spray a
8x11-inch baking dish with non-stick spray. Place sautéed
onions and soup mixture into the prepared dish.
Combine beaten eggs, salt, and half and half. Pour the
mixture over the
layers. Sprinkle with cheese. Bake at 350 degrees for 20
to 30 minutes or until brown and bubbly. SERVES: 8
