    List of Ingredients




    Meat Mixture:
    2 lb ground beef
    1 can green beans (chopped up 1/2 inch pieces)
    1 large Zucchini (chopped up 1/2 inch pieces)
    1 tin tomato paste
    1 egg beaten
    1 tsp. basil
    salt and pepper to taste

    Topping:
    1 head Califlower (cooked till tender)
    1 Tb. butter
    2/3 cup ricotta cheese
    salt and pepper to taste

    Recipe



    Preheat oven to 350 degrees.

    1. Brown ground beef till well done. Drain and return to pan.

    2. Add chopped zucchini and greens to meat mixture and season with
    salt, pepper and basil.

    3. Stir in tomato paste. The mixture will be fairly dry, but as the
    vegetables cook liquid will be released during baking. Add egg to
    mixture and mix well. Pat mixture into a 9X11 baking dish.

    4. Cook Cauliflower until very tender. Remove from heat and mash with
    a potato masher. Add butter and ricotta cheese and mix well. Season
    with salt and pepper.

    Spread evenly on top of meat mixture. Place in oven and bake for about
    30 minutes.

    Serves: 6-8
    Total Carbs: 70 grams
    Total Fiber: 22 grams

    Net Carbs: 6-8 grams per serving
