Spinach Cheese Pie

List of Ingredients




1 tablespoon butter
1 pound fresh or 1 box frozen spinach, lightly steamed.
1/2 cup chopped scallions, red onions, or chives
4 ounces feta cheese, crumbled
4 eggs, lightly beaten
1/4 to 1/2 teaspoon black pepper
a pinch of salt (optional -- depending on saltiness of feta cheese)


Recipe




Heat oven to 375° f. Butter a glass baking pan. (I use a Corning pie pan.)
Combine remaining ingredients and add to pan. Bake until top is starting to
brown, sides show that bottom is brown, and when pie is cut into, it is
cooked through, about 30 minutes.
