Spinach and Feta Cheese Rolls

1 (10-ounce) packages frozen chopped spinach, thawed
6 ounces ricotta cheese
1/2 cup grated Parmesan cheese
2 ounces Feta cheese
1/2 cup mozzarella cheese, shredded
1 Tablespoons chopped fresh basil
2 garlic cloves, minced
Salt and pepper to taste
2 cups bottled marinara or spaghetti sauce
leaves from a large cabbage, cooked until wilted
Grated Parmesan cheese for garnish
Recipe
1. Preheat oven to 350 degrees
2. Squeeze spinach dry. Transfer spinach to a large bowl.
Add ricotta, 1/4 cup Parmesan, Feta, Mozzarella, basil and
garlic to bowl. Season mixture with salt and pepper.
Blend.
3. Spoon 1/2 cup marinara sauce evenly over bottom of a 7 x
11 x 2-inch baking dish. On a breadboard, spread out a
partially cooked cabbage leaf and place a portion (about 1/3
cup) of the spinach mix on one side. Fold ends over and
roll until filling is enclosed. Place rolls, seam side
down, in dish. Repeat to use all of filling mix. Spoon
remaining sauce over shells. Sprinkle with remaining 1/4
cup Parmesan cheese. Cover loosely with foil and bake until
heated through, about 30 minutes. Use additional Parmesan
cheese for garnish.
