    Tomato Basil Casserole

    This is an original recipe by Lynn Nelson at the Busy Cooks

    List of Ingredients





    4 beefsteak tomatoes
    8 oz shredded mozzarella cheese
    1 cup loosely packed fresh basil leaves (chopped)
    4 cloves garlic
    garlic powder
    1 cup mayonnaise
    1/2 cup grated Parmesan cheese
    1/4 teaspoon white pepper

    Use a 13 x 9 glass baking dish, sprayed with Pam

    Cut tomatoes into wedges, drain on paper towels. Arrange 3
    rows of tomato wedges on oven proof dish, sprinkle garlic
    powder and 1/2 cup mozzarella cheese over tomatoes.

    In a food processor combine basil and garlic, cover and
    process till coarsely chopped. Sprinkle half the basil
    mixture over first layer of tomatoes.
    Add another layer of tomato wedges. Sprinkle the remaining
    basil mixture over tomatoes.

    In a medium mixing bowl combine 1 cup mozzarella cheese,
    mayo, parmesan cheese, and pepper. Spoon cheese mixture over
    basil mixture /tomatoes, spreading to evenly cover the top.

    Bake at 375 for 15 min, then at 350 for 15 more minutes or
    till top is golden and bubbly. Serve warm...great micro
    waved for a snack.
