Zucchini en Casserole

List of Ingredients
3 tbsp Olive oil
3 med Zucchini, sliced
2 green tomatoes, diced
1 med Onion, chopped
1 tsp Garlic, minced
1/4 cup Basil, chopped
4 large Eggs, well beaten
3/4 cup Parmesan cheese
Salt and pepper -- to taste
Recipe
Heat the oil in a heavy skillet. Add the zucchini, tomatoes, onion, and
garlic to the pan. Cook until just soft. Remove from the heat. Add the
basil. Lightly oil a medium casserole dish. Add the vegetable mixture.
Lightly beat the eggs again and pour over the vegetables. Sprinkle on the
Parmesan. Bake at 250°F for 18-25 minutes or until the egg is
set and the cheese melted. Serve with sour cream and or salsa.
