Aunt Donna's No Bake Cookie Bars

Recipe Introduction
Hello. Kathy Grant here. I make these No Bake Cookie
Bars when we go camping. We live in Golden, CO, and
are at a high altitude so these are good to make and
have anywhere. I cut them up and put them in foil
squares and keep them in the cooler. If you will have
them out in higher temperatures, use carob instead of
cocoa -- it melts at a higher temperature. The basic
recipe was from "Our Favorite Vegan Recipes", from the
friends of Wilderness Ranch, Sanctuary for Farm Ani-
mals, in Loveland, Colorado; recipe donated by Janet
Pelkey.
1 cup turbinado sugar or sucanat
1/4 cup cocoa powder or carob powder
1/3 cup rice, soy or other milk
2 tablespoons margarine (I'd use butter -- Chet)
Combine ingredients and cook until it boils for
about a minute on medium high heat. Remove from
heat and add:
3/4 cup peanut butter
2 cups quick oats
1/4 cup chopped dried fruit of choice (OPTIONAL)
Stir in peanut butter FAST! Spread in buttered 11x9
brownie pan. Refrigerate until set, then cut into
squares or triangles.
