    Sweet and Spicy Cake & Ice Cream

    We are coming up on the holidays and that means sweet treats. It doesn't have to mean disaster for your food plan. Here are a couple of treats that will make it seem like old times...Here's a deliciously sweet and spicy cake, reminiscent of a light gingerbread.

    List of Ingredients





    1 cup stone ground whole wheat flour (or substitute 1/2 cup sgww flour and 1/2 cup flour substitute such as ground nuts or flour substitute mix from Atkins, etc.)

    2/3 cup protein powder
    1/4 cup light molasses
    1/2 cup fluid--orange juice (or cream or half and half)
    1/2 cup equivalent measure of sugar substitute
    1/3 cup vegetable oil or butter
    1 egg
    1 1/2 teaspoons baking soda
    1 teaspoon ground ginger
    1 teaspoon ground cinnamon
    1/2 teaspoon ground cloves
    1/2 cup no sugar orange marmalade


    Recipe



    Heat oven to 350 degrees

    Lightly oil and flour a 9-inch square pan.
    Combine all ingredients except marmalade in a large bowl.
    Beat at a low speed until well combined.
    Pour into pan and bake for 30-35 minutes, or until top of cake springs back when touched lightly with finger tip.
    After removing cake from oven, heat marmalade in microwave or over a very low heat on stove, stirring occasionally, until heated through. Spread over warm cake.

    Yield: 9 servings. Top with lc ice cream if desired
