    Here ya go - I'm ashamed to admit I will make this just for me after
    the kids go to bed sometimes. }:) **evil grin**

    Recipe may be doubled - it was origianlly a microwave recipe, so
    this is my adaptation. Wren--

    List of Ingredients




    1/4 cup organic unsweetened cocoa powder

    3-4 Tbsp cornstarch (or xantham gum powder or arrowroot powder - I
    use which ever I have on hand, remember that arrowroot will lose
    it's thickening power if cooked too long so don't overcook)

    1 slightly rounded scoop white stevia powder (I use KAL brand and it
    comes with a scoop that is less than 1/16 of a teaspoon) - if you
    don't have the scoop or use KAL brand, I would recommend that you
    make it with very little then taste it when it's all done and see if
    you need to add more. Different brands and forms of stevia taste
    different.

    1 Tbsp organic butter

    1 cup milk - I use raw milk, full fat

    1/2 cup heavy cream - I use raw cream

    1 tsp vanilla

    2 egg yolks, tempered

    1/8 tsp cinnamom (optional)

    Recipe



    Combine cocoa, stevia and cornstarch in saucepan. Gradually whisk
    in milk and cream until well blended.

    On medium high heat, bring just to a boil and cook until it thickens
    to the desired thickness. Add vanilla, cinnamon if desired. Remove
    pudding from heat. Temper the the eggs: whip them a couple of times
    with a fork in a small bowl, then add one tablesppon of hot pudding
    mixture to the eggs at a time and stir well, adding about three
    spoonfuls to the egg total. This helps the eggs adjust to the temp
    of the pudding so they won't cook into strings when you add them to
    the pudding mixture. Return pudding to heat and add the eggs to the
    hot pudding mixture and stir in well. Pour immediately into serving
    bowl(s), cover the surface with wax paper to prevent a skin from
    forming and cool till time to serve.


    I've made this with buttermilk and it was good. I made it with
    kefir and it wasn't so good - too tart! I suppose you could use
    plain old whole milk and it would be equally tasty.
