Recipe Introduction
NOTES : Really super! I used the chicken that had been marinated
in soy sauce, water and garlic powder for a chicken and
veg stir-fry - 1 whole chicken breast, 4 tablespoons soy
sauce, 1 1/2 tablespoons water, garlic powder.
1/2 cup green onion -- chopped
1/2 cup celery -- minced
3 tablespoons safflower oil -- plus additional
4 eggs
1 cup cooked chicken -- or turkey, finely shredded
1 cup bean sprouts -- coarsely chopped
1 tablespoon soy sauce
In a large skillet, heat a very small amount of oil. Saute the green
onion and the celery unti the celery is cooked a bit. Remove from the
skillet and set aside.
In a medium sized bowl, beat the eggs. Add the chicken, bean sprouts, soy
sauce and green onion-celery mixture. Stir well to combine.
With paper towels, wipe the skillet clean. Heat 3 tablespoons oil in the
skillet. When the oil is hot, spoon in 3 good sized spoonfuls of the egg
mixture. It will spread a little. Cook, checking to see that the bottom
has browned, about 1 1/2 minutes. Turn over and brown the other side.
Drain on paper towels. Place on a plate in a warm oven and repeat with
the remaining batter, making 3 more "cakes."
Makes 6 good sized patties. Serve with Brown Gravy.
