South of the Border Eggs

List of Ingredients
1 onion, chopped fine
3 Tablespoons butter
1/2 cup sliced mushrooms
1-4 oz. can green chilies, chopped
1 cup cheddar cheese, grated
6 eggs
4 Tablespoons water
Pinch marjoram
Salt and pepper to taste
La Victoria medium or mild red salsa (bottled)
Recipe
Cook onion in butter until golden brown. Add mushrooms and
chilies and sauté for a few minutes. Add cheese, set aside.
Break eggs into bowl and add salt, and pepper, and 4
tablespoons water. Beat thoroughly.
Start cooking the onion mixture again and when it becomes
hot again, pour egg mixture over onion mixture, sprinkle
with pinch marjoram, and scramble slowly by lifting the
cooked portion to allow the uncooked egg to run underneath.
When it stops flowing, turn it over for a few seconds to
cook, and then serve.. Top with bottled Mexican style salsa
if desired.
