    Andrea's Mexican Cabbage

    Thinly slice and rinse a small head of green cabbage, or half a larger head. Loosely pile into a covered, microwavable casserole dish (such as Pyrex). Sprinkle generously with ground cumin, but not so much that you can't see the cabbage ;@). Squeeze the juice from one or two fresh limes over the cabbage, dot with 2 Tbsp butter. Cover and microwave on high for 3 minutes, and stir. You might want to cook it an extra minute or so after that (I prefer it crispy). You can also let it sit at this stage while you finish broiling your entree or whatever, and let the residual heat finish the cooking.

    Carbs are so low on this that I basically eat as much as I want and don't worry about it!
