    Baked Salmon with Sour Cream-Dill Sauce

    List of Ingredients




    1 salmon fillet (about 1 1/2 pounds)
    1 cup sour cream
    3 tablespoons fresh dill, chopped (rosemary leaf makes a viable substitute)
    3 tablespoons red onion, chopped fine
    Salt, pepper
    Garlic powder to taste
    Olive oil

    Recipe



    Mix sour cream, dill, onion, (salt and pepper to taste) in a bowl and
    let stand at room temperature for one hour. Preheat oven to 400 degrees.
    Spray bottom of a glass baking dish with non-stick spray, and drizzle with
    olive oil
    (or oil a cookie sheet if your piece of salmon is too long for the dish).
    Place the salmon in the
    dish ,skin side down. Sprinkle top of it with salt, pepper, and garlic
    powder to taste.
    Take 1/3 cup of the sour cream mixture and spread it on top of the salmon.
    Bake for
    20 minutes or until salmon is pink. Serve with additional sauce on the side

    Tartar sauce:
    1 Tablespoon dried onion flakes
    1 Tablespoon dill pickle relish, drained inside of relish bottle
    1 Tablespoon lemon juice
    1/2 cup fresh mayonnaise or sour cream--according to preference

    Mix together and allow to marinate for about an hour. Serve with fish.
