Fish in packets

Prepare individual squares of aluminum foil aout 12 x 10 or 12 x 12. Spray them with non-stick spray, lay a piece of
fish (large enough for one portion) on each square, put some slices of swiss cheese over each porrion, add salt and pepper, some dill weed or fennel fronds if available, or oregano, some lemon juice, dot with some knobs of butter and fold up loosely, leaving some air in each bundle. Like a pasty shape rather than a parcel.
Put on a baking sheet, into a hot oven for about 15 - 20 minutes depending on thickness of fish.
Be careful when opening each packet because of the steam, slide them as they are on to each plate and pour the liquid over them.
It is nice served on a bed of mashed cauliflower.
