1 Tbsp butter
1 lb flounder fillets
salt and pepper, to taste
1 Tbsp grated onion
2 plum tomatoes, peeled and diced
1 Tbsp butter
1/2 cup Swiss cheese, gratedRecipe
Wash and dry fish. Using 1 tbsp butter, liberally grease shallow
baking dish. Place fish in dish and sprinkle with salt, pepper and onion.
Top with diced tomato. Dot with remaining tablespoon of butter. Under medium
broiler heat, cook for about 20 minutes or until fish will flake with a
fork. Sprinkle
with cheese.Return to broiler and cook until cheese is melted. SERVES 4
