Blender Batter Pancakes

5-8 servings
2 cups warm water
1/4 to 1/2 cup kefir
2 1/4 cups whole grains (I use 1 1/2 cups of
wheat berries and 3/4 cup oats)
2 tbs coconut oil
2 tbs honey (I don't add any sweetener)
2 eggs
2 tsp vanilla extract
3/4 tsp baking soda
1 tsp salt
1 T baking powder
I combine water, kefir and grains in my blender
and let soak overnight or at least 8 hours. Then
add remaining ingredients except soda, salt and
baking powder in the morning. Blend for 3-5
minutes. Add leavenings, blend well, etc.
We make extras on the weekends for the kids to eat during the week...
