How about this for getting thicker kefir. Put half the grains in your jar
on the counter, and brew normally. Put the other half in another jar, with
milk, and leave it in the fridge for 6 days, or until you see some whey
pockets beginning to form. When you decant this, you will experience the
most Heavenly, creamy kefir ever!
Something else you can try is to brew for 18 hours on the counter and 6
hours in the fridge - this will also yield a creamier kefir :-)
