Hi all I wanted to tell you of my expirement, I put freshly ground
flour in bowl, I then put kefir just till its semi stiff dough like
cookie dough. I let it sit in my counter for 24 hours. I then put some
flour on my table and put some of the dough on top and rolled it out you
may have to add touch of flour on top then on hot grilttle I also
sprinkle salt very small amount . What ever I did not use I put it back
in the frige. Today which is about one week later I made them again
and they turned out lighter, at first it was more like some crakers
today was more like heavier pancake. I like the fact that its in the
fridge and the kefir is eating the carbs from the flour. I used kamut
that I ground myself.
