I put 3cups of kefir in a mixer bowl with 2 egg yolks. To this I add whatever blended fruit I have chosen,( frozen strawberries processed in a blender works well and substantially shortens the freezing time). We add stevia or honey to taste, but maple syrup works well (about 1/2 cup) for some flavors. I mix this on med high for several minutes, then put in my ice-cream maker. we eat it mostly right away as soft serve. We have placed the leftovers in the freezer, but it gets creamy ice hard....so we put it in popscicle holders. mmmmmmmmmmmmmmmmmmmmmmmmmm
