Carolina BBQ Ribs

Recipe Introduction
NOTES : This recipe makes enough for 2 slabs of ribs - about 4 servings.
Make batches of this spice mix up in advance !
List of Ingredients
2 sides pork back ribs -- Baby back
Dry Rub
3 Tablespoons Paprika
1 Tablespoon Tumeric
1/8 teaspoon cayenne pepper
2 Tablespoons Garlic Powder
1 Tablespoon Black Pepper
1 Tablespoon Brown Sugar Twin
2 teaspoons red pepper flakes
1 teaspoon Thyme
BBQ Sauce
1 medium onion, whole -- Sweet Yellow
1 teaspoon Olive oil
4 cloves Garlic -- Minced
1 cup Sugar Free Maple Flavor Syrup
1 cup tomato paste
3/4 cup Cider vinegar
1/2 cup Soy Sauce
2 Tablespoons Worcestershire sauce
1 teaspoon Tabasco sauce
1 teaspoon mustard powder
1 Tablespoon Ginger -- Minced
Recipe
Mix spices together in a small bowl.
Wash, trim and remove the membrane of 2 sides of Pork Baby Back Ribs.
Rub the spice mixture into both sides of the ribs.
Wrap Ribs in tin foil and refrigerate for 24 hrs.
Leave the ribs in foil and slow roast in 300 degree oven for 2 hours.
Slice Onion into 1/4" slices and sautee until transparent. Add remaining
sauce ingredients and simmer for 30 minutes. Can be made up in advanced and
chilled until use.
Build a fire using charcoal or wood and burn it to hot coals...or broil in
the oven.
Grill the Ribs meat side up for 15 minutes, basting the top with BBQ sauce if
desired. Do not flip.
Meat begins to pull away from the bone when it's done. Remove from heat and
wait 5 minutes before cutting.
