Venison Steaks

Recipe Introduction
Have your salad ready and preparing a veggie like cooked cauliflower is nice
with this.
List of Ingredients
4 venison steaks, pounded with mallet, and blotted to remove excess moisture
from the surface
¼ cup cooking oil
3 Tablespoons flour
Salt and pepper to taste
1 cup heavy cream
Recipe
Season steaks with salt and pepper and dust on both sides with flour,
shaking off excess. Fry steaks in oil until well browned and done. Avoid
overcooking. Remove steaks from pan, keep warm on warming serving plates in
oven, and begin to make gravy. Pour off excess oil, leaving skillet browned
bits. Add and whisk in cream over medium low heat, do not boil. Keep working
to remove flavor it form bottom of pan. Season with black pepper and some
salt. When gravy is desired consistency, spoon over steaks and serve
immediately. 4 servings
