    Elegant Spaghetti Squash

    1 large spaghetti squash
    boiling water
    2 tablespoons butter
    1/2 teaspoon garlic salt
    1/2 teaspoon black pepper
    2 tablespoons fresh chives, chopped
    1 cup grated Parmesan cheese

    Recipe



    Cut the squash lengthwise in halves, remove the seeds, and place the squash,
    cut side down, in a large baking dish. Add boiling water to a depth of 1 1/2
    inches. Bake squash at 350 degrees for 50 minutes, or until tender.

    Remove from the oven and let cool slightly. Using fork tines, remove
    spaghetti-like strands of squash and place them in a mixing bowl.

    Add butter, garlic salt, black pepper, chives, and Parmesan cheese, tossing
    to coat the squash.

    Serves 8 to 10.
