Chicken Paprika

1 chicken, cut up, or chicken pieces to suit.
1 red bell pepper
1 onion, chopped
2 Tbs. Paprika
2 cups chicken broth or chicken stock
1 1/2 cups sour cream--yogurt or low fat sour cream ok
Recipe
Brown chicken pieces, skinned or unskinned, as you wish, in
a little oil. Remove from pan.
Add 1 thinly sliced red bell pepper and 1 chopped onion to
the remaining oil in the pan and cook for 2 or 3 min. until
they soften and barely start to brown.
Add 2 Tablespoons paprika and cook 1 min. longer.
Add 2 Cups chicken stock (I use canned nonfat chicken
broth.) and stir, mixing the vegetables and paprika evenly.
Return chicken to the pan and simmer,covered about 1 hour,
or until very tender. Remove chicken to a platter.
Stir in 1 1/2 cups sour cream, low fat, no fat, or what ever
you desire, into the remaining pan juices/stock. Mix until
sour cream smoothes out and mixes with pan juices. Heat just
to warm, don't boil! Season to taste. Pour sauce over
chicken.
