Cindy's Chicken-Parmesan Meatballs

These are good made with any poultry, especially
leftovers :-)

12 c. cooked poultry, minced or chopped very fine
10 eggs, lightly beaten
4 c. grated Parmesan
2 c. finely crushed pork rinds
pepper to taste
Smush it all together in a big bowl; shape into 1" balls.
Arrange
in an ungreased baking pan, and bake at 375 degrees for about
15 minutes or till done.
Flash freeze; then freeze in portions of your choosing in freezer
containers.
