Pork Chops in Bleu Cheese Sauce

Serves 4
List of Ingredients
2 lbs center cut pork chops about 3/4 inch thick--if
thicker, butterfly them and have twice as many pieces
2 Tablespoons olive oil
salt, pepper
16 oz fresh mushrooms
2 Tablespoons butter
3 1/2 oz bleu cheese
3/4 cup heavy cream
3/4 cup sour cream
1/3 cup chopped parsley
1 Tablespoon soy sauce
Recipe
Heat the oil in a frying pan and brown the pork chops on all
sides.
Place the meat and put in an oven-proof, non-stick sprayed
baking dish. Season with salt and pepper.
Slice the mushrooms, using the same skillet, melt butter and
sauté mushrooms for 5 to 10 minutes, until they give up
their water. Set aside, reserving the juices from the
mushrooms.
Spoon the mushrooms onto the meat and crumble the blue
cheese over it all.
Mix cream, sour cream, parsley and soy sauce into the
mushroom juice and pour it all into the dish. Bake in the
middle of the oven at 400F for 15 to 20
minutes.
