    1 pound boneless pork loin
    2 tablespoons smooth peanut butter (no sugar added)
    1/2 cup onion, minced
    1 clove garlic, minced
    2 tablespoon lemon juice
    2 tablespoons soy sauce
    1 tablespoon Brown Sugar Twin
    1 dash Tabasco sauce
    1 tablespoon canola oil

    Cut the pork into 1/2" cubes. Place all the remaining ingredients in a
    blender and blend until evenly mixed. Marinate pork in this mixture for
    several hours to overnight.

    Thread pork on skewers and grill over hot coals for eight to 10 minutes,
    turning occasionally, until done. (If using bamboo skewers, soak them in
    water for one hour to prevent burning.)

    Serves 4 @ 221 calories, 12 grams fat, 23 grams protein, and 5 grams
    carbohydrate w/ 1 gram fiber.
