Stuffed Pork Chops

Stuffing:
1 (8 oz) block cream cheese; softened
2 teaspoons garlic powder
1 teaspoon thyme; dried, crushed
1 Tablespoon dried onion flakes
1/2 cup beaten or ground pork skins ground finely
Meat Rub:
1 tablespoon onion powder
1/2 tablespoon basil; dried, crushed
1/2 tablespoon paprika; ground
1/2 tablespoon Salt
1 teaspoon turmeric; ground
1/2 teaspoon black pepper; ground fine
1/4 tablespoon red pepper flakes; ground
4 thick (6.5 oz) boneless pork loin chops with pockets cut into them, almost, but not quite all the way through.Recipe
Place cream cheese in a bowl, and add remaining stuffing ingredients. Set aside.
Combine Pork Rub ingredients and process until fine. Divide the stuffing mixture into 4 parts and place it in the slit in each chop. Secure slit with toothpicks.
Rub the chops down with the meat rub mixture and grill until done. Using a George foreman grill, this takes 8-10 minutes depending on thickness.
Remove the chops from the heat. Serve immediately.
