Asian Cole Slaw

List of Ingredients
1/2 cup vegetable oil
1/4 cup rice vinegar (unseasoned style)
2 tablespoons oriental light sesame oil
1 1/2 tablespoons minced peeled fresh ginger
2 teaspoons soy sauce
1 packet Splenda
6 cups Napa cabbage (bok choy) (You can use regular cabbage)
shredded in the food processor
6 green onions, very thinly sliced
6 ounces snow peas, stringed, thinly sliced lengthwise
1 large red bell pepper, thinly sliced (green pepper is ok)
1/2 cup roasted peanuts
Recipe
Stir first 5 ingredients in medium bowl to blend. Mix
cabbage and remaining ingredients in large bowl. Toss with
enough dressing to coat. Season with salt and pepper. (Can
be made 3 hours ahead. Cover; chill.) Serves 4 or more
