Bacon, Canadian Bacon and Gouda Salad

Recipe Introduction
A sweet-hot Dijon dressing plus baby spinach and fresh sliced nectariness make this a sweet-and-savory salad treat.
dressing:
2 packets Splenda or Stevia
2 Tablespoons water
1 Tablespoon dry hot mustard
2 Tablespoons lemon juice
2 Tablespoons Dijon mustard
1/4 cup olive oil
sea salt to taste
beat or shake to mix ingredients well
salad:
1 bag (10 ounces) ready-to-eat baby spinach, washed in cold water and drained well
1/4 cup real bacon bits
12 ounces sliced Canadian-style bacon, cut in strips
8 ounces Gouda cheese, sliced into strips
1/4 cup Feta cheese
2 medium fresh nectarines, peeled, pitted and sliced
1/4 cup sliced almond pieces
1/2 cup sweet-hot Dijon dressing
Arrange spinach on 4 plates.
Top with bacon bits, Canadian bacon, and cheese.
Drop nectarine slices into the salad dressing, remove, and arrange on the salads. Top with almond slices. Drizzle arranged salads with dressing. Garnish with leaf from parsley, basil, strawberry, or spearmint if desired.
