    Broccoli Salad 2

    Houston Junior League Cookbook

    List of Ingredients

    2 packages frozen chopped broccoli
    3/4 cup beef consommé (unsalted-or use less salt below)
    2 envelopes unflavored gelatin
    1 teaspoon Worcestershire sauce
    1 teaspoon (or less) Tabasco
    1 teaspoon salt (omit if using salted consommé)
    2 Tablespoons lemon juice
    2 teaspoons grated onion
    2/3 cup mayonnaise
    4 hard-cooked eggs


    Recipe

    Cook broccoli. Drain and chop finely. Soften gelatin in 1/4 cup consommé.
    Heat remaining consomme; add Worcestershire sauce, Tabasco, salt, lemon
    juice and onion. Add softened gelatin to hot consommé mixture; stir until
    dissolved. Combine broccoli and mayonnaise. Add consommé mixture to
    broccoli mixture. Slice eggs and arrange in ring mold. Spoon broccoli
    mixture carefully over sliced eggs. Chill until firm.
