    Broderick Family Black Bean and Corn Sal

    *1 can black beans (or about two cups black beans prepared NT style...
    Sally Fallon calls canned beans an acceptable cheater food if you
    don't have the time for soaked and cooked beans.)
    *Corn cut from two ears (I grilled this corn, though boiled is just
    fine. In the past we have used a can of whole kernal corn or defrosted
    frozen corn too.)
    *Red Bell pepper, diced (1/4 of a pepper, half a pepper, a whole
    pepper, you decide)
    *1/4 of an onion, minced very fine. (red onions are pretty, but white
    do fine. I've even used green onions)
    *1/4 cup to 1/2 cup of vinegarette dressing (the family standard is
    Wishbone Italian, but any mildly flavored homemade vinegarette is
    wonderful, and better for you than the corn syrup and soybean oil stuff :)

    Put everything in a big bowl and stir to combine. Eat right now, eat
    after it's chilled for a while. I like it over warm or cold rice, or
    over lettuce. It's hearty enough to be real food but light enough not
    to kill you in the desert heat :)
