CHAYOTE VINAIGRETTE

1 1/2 quarts water
2 chayotes (1 1/2 pounds total) -- peeled, seeded and
cut into
2 inch cubes
1/2 cup vinegar
1/2 cup water
1/4 cup Splenda
salt and pepper to taste.
Recipe
In a 3- 4-quart pan over high heat, bring water to boil
Add chayotes to water and simmer until tender, about 10 minutes.
Meanwhile, in a saucepan, heat vinegar water and sugar.
Pour over chayote and chill
